Observed 3-compartment sink set up from right to left as: rinse, wash, sanitize. Washed utensils and equipment shall be rinsed so that abrasives are removed and cleaning chemicals are removed or diluted through the use of water or a detergent-sanitizer solution by using the following procedure: Use of a distinct, separate water rinse after washing and before SANITIZING if using a 3-compartment sink. Discussed with person in charge (PIC) why rinse step shall be in the middle compartment of the 3-compartment sink. PIC had rinse step moved to middle compartment. Corrective Action: Corrected at time of inspection.
