Corrective Action: Corrected at time of inspection. Employee wearing gloves touched the walk-in door and the trash can then returned to handling food without washing hands. Employee washed their hands, then touched their face and put on gloves to handle food without washing hands again. Manager had employee wash hands.

Inspector's notes
Observed the walk-in cooler holding at 53.6*F using min/max thermometer. Observed raw chicken filling/mixture with an internal temperature of 47*F that the person in charge (PIC) stated was just made and put in the walk-in cooler. PIC moved chicken filling/mixture to a different cold-holding unit to rapidly cool. Also overserved milk with and internal temperature of 52*F and a bowl of raw pork filling/mixture with an internal temperature of 52.6*F that the PIC stated was put in the walk-in cooler the day prior. PIC voluntarily discarded the pork filling/mixture and milk at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

All foods improperly cold holding were moved to another cold-holding unit or voluntarily discarded at time of inspection. Person in charge (PIC) is scheduling repair for walk-in cooler. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled for 1/21/24.
