The cutting boards were discussed at the previous inspection, but have not been replaced. The establishment shall use cutting surfaces that are smooth and easily cleanable. Corrective Action: Correct prior to next routine inspection. 4-101.18 - Core: Nonstick Coatings, Use Limitation Addl Notes: Observed multiple cooking pans originally manufactured with nonstick, Teflon coatings with significant scoring and damage to the nonstick material on a storage rack next to the cookline. The establishment shall not use cookware with damaged nonstick surfaces to prevent the migration of deleterious materials to food. Corrective Action: Correct prior to next routine inspection.
