Observed cutting board with many score marks and discoloration in use at the prep table in the kitchen area. Ensure that the cutting board is repaired or replaced by the next routine inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Corrective Action: Correct prior to next routine inspection. 4-202.11 - Priority Foundation: Food-Contact Surfaces-Cleanability. The wooden boards cannot be properly washed, rinsed, and sanitized so should not be used as a food contact surface. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Corrective Action: Corrected at time of inspection.

Ensure all items that have under cooked eggs and meats are labeled with an asterisk before the reinspection that will occur on or before 3/20/2026. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Corrective Action: Correct prior to re-inspection.
