Inspector's notes

Observed quat sanitizer in the three-compartment sink, with soaking dishes, measuring above 400 PPM. Alerted the manager, who diluted the sanitizer with water to the appropriate concentration at the time of inspection. Staff plan to dilute the sanitizer with water to the proper concentration range (150-400 PPM) until the automatic sanitizer dispenser is dispensing sanitizer at the correct concentration. After a discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation. Corrective Action: Corrected at time of inspection.

Observed grey and blue build-up on the baking sheets inside the blast chiller. Management said the blast chiller has not been used since December. Management has placed a work order on the machine and the part is on order. Alerted staff and instructed them to clean the baking sheets at close tonight. All equipment must be kept clean. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
