Discussed with person in charge (PIC) 1) all food contact surfaces, equipment and utensils shall be stored away as clean to sight and touch. 2) soda nozzles/gaskets and removable soda gun parts shall not be soaked in water overnight. They shall be cleaned as a soap, rinse, sanitize and dry.

Observed salsa in the walk-in cooler with a prepped date of 7/27 at time of inspection. Observed cooked carnitas in a prepped table with a prep date of 8/10 at time of inspection. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
