Inside the cooler, observed TCS foods with internal temperatures ranging from 44-52*F when measured with a probe thermometer, including: raw chicken, beef, salmon, RTE pulled pork, and cut tomatoes. Except during preparation, cooking, cooling, or when time is used as a control all TCS foods are to be maintained at 41°F or less. PIC stated all foods in the cooler were observed in temperature this morning during a line check before opening. PIC discovered a plastic bag had obstructed the unit's fan which was removed at the time of inspection. Since the foods had been out of temperature for an unknown length of time and the last line check was conducted more than 4 hours prior, the PIC voluntarily discarded the out-of-temperature foods at the time of inspection. After removing the bag, observed the air blowing at 31*F. Advised PIC to store TCS foods in other units until repairs are conducted on the unit, if necessary.
