Requested PIC provide paper towels for both handwash sinks at time of inspection. PIC stated the first pizza was placed into the first zone at 9:30 AM today and will discard the pizzas at 1:30 PM today if they are not used/sold by then. TCS food items using time as a control must have their time tracked via timers once the first pizza enters a "zone" on the speed rack.
