Inspector's notes

Observed multiple TCS items (such as cooked sausage and chicken) in the hot holding unit by the grill with internal temperatures between 65-79°F at the time of inspection. The Person in Charge (PIC) stated the food had been reheated then placed in this unit less than 4 hours before inspection time. Discussed temperature monitoring procedures and policies. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
