This establishment received an A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection. No County legal action will result from this inspection. Inspection report printed. Upon arrival, the Person in Charge (PIC) informed the inspector that the sandwich line cooler was not functioning properly. The PIC stated that food in this unit had internal temperatures of 41°F or below less than 4 hours before the inspection time, and food in this unit had internal temperatures between 40-50°F at the time of inspection. A technician was scheduled for repairs before the start of the inspection. Food in this unit is temporarily being monitored by Time as Public Health Control. Reviewed cold holding policies and procedures along with Time as Public Health Control procedures with the PIC. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Observed cooked meats in the prep cooler next to the sandwich line with internal temperatures from 49-51°F at the time of inspection. The ambient air temperature was 43.3°F. The Person in Charge (PIC) stated the meat had been here less than 2 hours before the inspection, so meat was moved to a different refrigeration unit. This unit will not be used until it is repaired and able to maintain proper cold holding temperatures. Discussed cold holding policies and procedures with PIC. Refrigeration capacity is sufficient.
