Chemical sanitization dish machine was not dispensing sanitizer between the required 50-100ppm- it measured at 0ppm. Three compartment sink will be utilized to wash,rinse, and sanitize dishes until machine is in good repair. Discussed the use of test strips to ensure machine is in good repair before use. Observed reach in refrigerator (closest to the kitchen door) measuring at an ambient temperature of 60 degrees F. Food items such as cheese, cut lettuce, sauces, and boiled eggs measured with internal temperatures ranging between 51-56 degrees F. These items were recommended for embargo. Discussed not storing TCS food items in a refrigerator when it is known to be not in good repair.
