Inspector's notes

Observed fresh mozzarella, smoked mozzarella, brie cheese, fontina cheese, provolone cheese with an internal temperature of 54-57*F in open chest display cooler near Murrays Cheese stand. PIC, stated all foods had been stocked more than 4 hours prior to inspection and were discarded. It was determined, display cooler was holding ambient air temperature of 56*F at time of inspection and placed a service ticket to make repairs to unit. Corrective Action: Corrected at time of inspection.
