Observed high temperature dish machine that measured 139*F with inspector min/max thermometer. Chef instructed staff to sanitize dishes in 3 compartment sink after they come out of the machine. Chef called for service at time of inspection. Discussed with Chef that a high temperature dish machine should measure a minimum of 160*F. Corrective Action: Corrected at time of inspection.
