Observed a green scrubbing sponge in the hand sink across from drive thru window. There was also food debris and lettuce in the same hand sink. Discussed with employees that hand sinks need to be clean and clear and ready to use at all times to reduce risk of contamination during hand washing. Employee moved sponge and cleaned out the hand sink at time of inspection. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Observed boba on the counter at 80*F and a half gallon of half and half on the counter at 62*F using internal probe thermometer. Employees had just started their shift and was not sure what time these items had come out of the cold holding unit. The employees voluntarily discarded at time of inspection. Please see embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed tuna salad (made in house) in the sandwich cold-holding unit without a date. The employee put a date on the container at time of inspection. Also observed spray bottle with an egg wash mixture used for the bagels that did not have a date. Employees voluntarily discarded the mixture because they said they didn't know when it was made or how long the mixture had been there. Please see embargo form. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
