Observed sliced tomatoes, sliced cucumbers, sliced bell peppers, shredded lettuce, sliced onions in the prep line cold holding unit with temperatures ranging from 47*F-52*F. In the other cold-holding prep table tuna was observed with an internal temperature of 47*F. Measure the temperature of the unit with min/max thermometer inside, lid was down and got a temperature of 52*F. Discussed with Person in charge (PIC) that the unit was not keeping the food at 41*F and needed to be looked at. PIC opened a ticket for repairs. All food items were put in walk-in cooler to get down to or below 41*F.

PRIORITY VIOLATION-7-206.11 - Priority: Restricted Use Pesticides, Criteria Predefined Comment: All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

PIC removed the top layer and the bottom layers were holding 40-41F. PIC moved the tomatoes and meat items to the walk in to cool back down to 41F.
