#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed internal temperatures between 46*F and 48*F in the cold-holding unit across from the stoves. Used the min/max thermometer in the unit and observed a minimum temperature of 47.3*F. Discussed with person in charge (PIC) that we need a temperature of 41*F for TCS foods. PIC moved food items to another unit that is holding proper temperatures. PIC also called the repair person to have unit serviced. Repair person told inspector they would be there within an hour. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
