#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed smoothie base made with dairy milk, cooked scrambled eggs, cut tomatoes, cooked chicken salad, cooked bacon slices (48-50'F) in tabletop prep cooler located by pizza unit. Ambient temperature of unit in question measured at 48.8'F. Cooked scrambled eggs were stocked more than 4 hours ago by PIC. PIC stated all other TCS food items in question have been continuously topped up throughout the morning, but the first batch of each item were stocked less than 4 hours prior. Cooked scrambled eggs were embargoed and PIC voluntarily discarded items at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Establishment observed with more than adequate coldholding capacities. Faulty unit in question was emptied of TCS food items at time of inspection and PIC agreed to not use unit until it has been fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. 2ND CONSECUTIVE VIOLATION. Corrective Action: Corrected at time of inspection.

Technician stated the water heater was off but turned on. Inspector waited approximately 20 minutes until the water measured at 100*F.
