-- -- In reach-in prep refrigerator near grill, observed hash browns, turkey bacon, deli ham, deli turkey, shredded cheddar cheese, and chorizo with temperatures ranging from 45°F-52°F using probing thermometer. The ambient temperature of the reach-in refrigerator initially measured at 56.3°F using min/max thermometer. The person in charge stated food safety temperatures were checked a couple hours prior to the inspection, and both the unit and all TCS items in it were cold holding at or below 41°F. At the time of inspection, the items were kept in the unit and completely submerged in an ice bath to rapidly cool back down to 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

-- Using min/max thermometer, the ambient temperature of reach-in prep refrigerator initially measured at 56.3°F. See violation above. At the time of inspection, the lid and all doors/openings to the unit were kept closed, and the temperatures began to decrease from 50.3°F to 48.7°F within minutes. Discussed with the PIC ensuring employees are keeping doors and the lid for unit closed as much as possible so that it maintains cold holding temperatures at 41°F or below. A work order also was placed at the time of inspection to verify unit can maintain cold holding temperatures. The establishment has sufficient refrigeration space to remain open while awaiting repairs for equipment. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. PIC stated they will have the walls and floor cleaned as soon as possible.
