-- Observed bag of beef chili in the thawing process at prep sink with an internal temperature of 75°F using probing thermometer. The person in charge stated the item was removed from refrigeration approximately 1 hour prior to the inspection so that it could be reheated and hot held in steamer. At the time of inspection, the chili beef was reheated to 135°F to hot hold. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

-- Multiple packages of TCS items such as hot dogs and chili beef bags were thawing in prep sink without running water. Reviewed approved thawing methods with the person in charge: The following are approved: • Under refrigeration that maintains the food temperature at 41°F or less; or • Completely submerged under running water. o Water must be 70°F or cooler. o Water must have sufficient velocity to float off loose particles. o Does not allow RTE thawed portions temp. Above 41°F. o Does not allow Raw animal food thawed portions temp above 41°F, for more than 4 hours. Requested at the time of inspection, requested water be turned on to continue thawing. Corrective Action: Corrected at time of inspection.

Main, and only, Walk-in cooler holding at 47*F upon inspector's arrival and throughout duration of inspection. TCS food items such as sliced cheeses and other dairy products in the walk-in had temperatures of 45*F during inspection. PIC stated the food items were checked last at 6:00 AM and was at 41*F while the ambient temperature was at 45*F at the same time. PIC thought maybe the door was left open during delivery this morning and was waiting for it to cool back down. PIC moved the TCS food items into the other coolers and freezers for cooling and continued cold holding. The walk-in will not be used for cold holding TCS food products until it is able to maintain a temperature of 41*F or below. PIC contacted repair technician to service the unit. The walk-in cooler is needed to continue to normal operations and be able to hold new shipments of TCS food items. Please have the walk-in cooler repaired/replaced and able to maintain an ambient temperature of 41*F or below prior to re-inspection within 10 days. ***2nd consecutive violation*** Corrective Action: Correct prior to re-inspection.

Sliced American cheese, sliced tomato, shredded lettuce, corn dogs, and other TCS food items found in walk-in with internal temperatures of 48-50*F. The cooler was last checked at 6:00 AM today and was at 38*F. The ambient temeprature in the walk-in was at 48-49*F for the duration of the inspection. PIC moved the TCS food items to alternate coolers and freezers for cooling and continued cold holding. The food items were found to have been cooled properly before the end of the inspection. The walk-in will not be used to cold hold TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 414*F or below. Corrective Action: Corrected at time of inspection.
