Raw beef, raw chicken, cooked beef, cooked chicken, chile relleno, eggs, milk, cheese, pork chorizo, and salsa with internal temperatures between 52 degrees F and 56 degrees F cold holding in the walk-in cooler. Ambient temperature of the walk-in was determined to be 55.6 degrees F by using a min/max thermometer. Raw and cooked meats, cheese, and eggs were moved to alternate coolers/freezer to rapidly cool down to 41 degrees F or below. All other TCS items were placed under time as a control (started at 7:30am) and will be discarded in 30 mins. PIC stated that a service technician will be here in 15-30 minutes to repair the walk-in cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Ambient temperature of the walk-in was determined to be 55.6 degrees F by using a min/max thermometer. TCS items inside walk-in cooler were placed under time as a control as stated in violation 22. A reinspection will occur within 24 hours to verify that the walk-in cooler has been repaired and is holding ambient temperature below 41 degrees F. New TCS food deliveries will not be accepted until walk-in cooler is repaired. Menu has been reduced and no cooling will take place until walk-in is holding ambient temperature below 41 degrees F. Establishment has sufficient cooler capacities to operate safely for 24 hours. All equipment must be maintained in good repair at all times. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Per manager, the Cabeza was cooked and placed in the walk-in cooler the night prior. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling to prevent the growth of pathogens. Observed multiple Time/Temperature Control for Safety (TCS) food items including cooked chicken, cooked beef, ham, pooled eggs, and sausage registering internal temperatures ranging between 48°F-53°F. Upon further inspection, the prep-top style refrigerator the perishable food items were located in measured an ambient air temperature of 48°F with a min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The perishable food items that were still within proper Time/Temperature parameters were rapidly cooled using an ice bath and moved to the walk-in cooler. The manager voluntarily discarded all other perishable food items observed out of proper Time/Temperature parameters. Corrective Action: Corrected at time of inspection. *2nd consecutive violation
