On sales floor hot holding unit, on bottom two shelves, cooked chickens with internal temperatures of 95*F-127*F. Per stickers on packages, chickens were placed out for service <3 hours. Chickens were removed from sales floor and reheated to >165*F and placed back out for service, on top two shelves. Recommended calling repair company to ensure hot holding unit is working properly. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.

On sales floor, at packaged deli meat cold holding, sliced meats with internal temperatures of 48*F-55*F. Per date/ time stickers, meats were sliced, cooled, and placed out for service within normal time parameters. All packaged sliced deli meats were moved to walk in cooler to rapidly cool back down to the proper temperature. Ambient temperature of cold holding was 53.6*F, taken with inspector min/max irreversible thermometer. Discontinue use of packaged deli meat cold holding until repaired. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

At the three compartment warewashing sink (without anyone actually actively washing wares), observed the third vat overfilled with wares in about three inches of sanitizer. The sink was slowly draining sanitizer solution. The PIC ensure the wares would properly be sanitized by staff. Repair the drain as needed to ensure washed wares can be completely submerged in sanitizer in the final step. The Corrective Action: Correct prior to next routine inspection.

Maintain hot TCS food at or above 135F. Noticed an alarm was sounding for the top shelf only. Staff indicated that items had very recently been placed in the case. The foods were sent to be reheated to 165F, and would be placed in the lower three shelves which were observed holding over 135F. The manager immediately scheduled repair of the case.
