Observed several TCS foods in prep tables on cook line including pooled eggs, hard-boiled eggs, and sliced tomatoes with internal temperatures ranging from 45-57*F. PIC stated that foods are discarded and replaced every two hours. Observed several TCS dairy products in server area including butter and ranch with internal temperatures ranging from 45-55*F for longer than 4 hours. PIC voluntarily discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed maintenance with PIC or using other methods to ensure proper cold holding such as ice bags. Also discussed Time as a Public Health Control. Observed employee crack eggs to cook on the stove, wipe hands on apron and reach into the hot holding equipment and grabbed a plate of hashbrowns. Observed contamination when employee grabbed hashbrowns with gloved hand and had not washed their hands or change gloves. Discussed the importance of proper hand washing and when hand washing is required. Hands must be washed at any time contamination occurs and when changing tasks. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Embargoed the contaminated plate of hashbrowns and PIC discarded. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed several TCS items in a cold holding top drawer below the stove with an internal temperature of 45*F to 55*F measured with a probing thermometer at the time of inspection. The unit was measured with a min/max thermometer, and it registerd at 55*F. Per PIC the TCS items were in the unit for more than 4 hours. The TCS items are mixed meat (ham, bacon, sausage), taco meat, diced ham, and corned beef. Embargoed the TCS items and PIC voluntarily discarded at the time of inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, all items listed above were placed in cooler more than 4 hours prior to inspection. PIC voluntarily discarded all items at time of inspection. Ambient minimum air temp was measured with max/min to be 51.8 *F. PIC will discontinue use of the warm part of the cooler until repaired. All other parts of the cooler were holding temperatures of 41 *F and below. Adequate other refrigeration is available. Discussed proper cold holding. TCS foods held cold must be maintained at 41*F or below at all times. Also observed the following time/temperature controlled for safety foods with internal temperatures between 51*F - 61*F in the prep table near the ice cream bar: Cut Lettuce, blue cheese sauce. Per PIC, items were placed in cooler less than 4 hours prior to inspection. PIC relocated to other coolers to rapidly cool to 41’F or below at time of inspection. It was determined that the cooler temporarily was disconnected from power and was reconnected. After connection, the ambient minimum air temp was measured with max/min to be 36.9 *F.
