Inspector's notes

Observed several speed rack trays wet stacked away as clean. Discussed with person in charge (PIC) all equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. PIC staggered the wet trays to allow for proper air dry at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed the fixed parts of the ventilation system has separated or missing caulking of the pizza oven. Discussed with PIC all fixed equipment of the ventilation system shall be sealed with high temperature caulking to create a smooth and cleanable surface and prevent the accumulation of grease buildup. Corrective Action: Correct prior to next routine inspection.
