Inspector's notes

Observed in the lemonade and milk cooler near the drive thru window to be holding items with labels stating "Keep Refrigerated" at internal temperatures of 49*F to 53*F. Ambient air temperature of unit was measured at 51*F with a min/max thermometer. Discussed with Person in Charge (PIC) except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC the TCS items have been in the unit for more than 4 hours prior to inspection. Discussed with PIC all TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed with PIC to use other adequate refrigeration until the lemonade and milk cooler has been fixed/replaced and can maintain all TCS at 41*F or less. TCS items discarded: oatmilk, almond milk, half & half, cold brew, lemonade, Blueberry basil lemonade, cucumber lemonade and strawberry lemonade.

Per person in charge (PIC) the wrong sanitizer chemical replacement container was used when it was switched out prior to inspection . PIC drained, cleaned and refilled 3-compartment sink with the correct quat sanitizer to a level of 150ppm at the time of inspection. PIC had staff rewash dishware with the correct quat sanitizer at time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels.
