Observed raw chicken, softshell crab, shrimp in sandwich prep cooler across from grill and fryers at 43-45*F. Lid was closed and temperatures rechecked to be at 42-43*F Cold hold of food to be at 41*F or lower. Advised staff to check raw food temperatures at prep station after meal rushes to verify foods are remaining at 41*F or lower. Also advised to cool foods to 41*F after thawing or prepping before placing in top section of sandwich prep cooler. Corrective Action: Corrected at time of inspection.
