Informed PIC that nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Observed no time stamp on the tapioca boba being held on time as a control. Employee stated that they were made about 3 1/2 hours prior to inspection. Employee stated that they forgot to time stamp the boba. Informed PIC and employee that a time stamp needs to be placed on the boba every time that time as a control is started; labeled with a start and end time. Employee placed a time stamp on the boba at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a large white and pink puddle of melted ice cream in the reach in refrigerator covering almost the entire bottom surface of the unit. Informed PIC that the puddle needs to be cleaned up and the reach-in should continue to be cleaned at a frequency which prevents the accumulation of food debris and organic matter. Observed a large puddle of water in the bottom of the front cold holding unit. Informed PIC that the puddle needs to be cleaned up and suggested that they have the unit serviced to figure out the cause of the leak. PIC stated that they will have a ticket submitted. Observed a one-inch by two-inch hole in the front hand sink which is allowing water to spill from the sink onto the floor with no place to drain. Informed PIC that this hole needs to be repaired in a way that makes it smooth and easily cleanable. Observed the leftmost pipe underneath the three-compartment sink to be leaking and dripping onto the floor. Also observed black organic matter on the outside of the pipes where the water is collecting. Informed PIC that this leak needs to be brought back into good repair. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection.
