Table top hot well is holding teriyaki sauce, cheese sauce and garlic sauce at 88-105 degrees F. As per cook cheese sauce came out of oven and other product was heated on stove before placing in hot well at about 11 am. Hot well set on low and water temperature is at 122 degrees. Unit was turned up to maximum and water temperature reaching 185 degrees during inspection. All product was reheated on stove top to over 165 degrees. Reviewed hot holding, reheating and how to check thermometer calibration using ice water at 32 degrees.
