Observed upright cooler on the cook line that had an ambient temperature of 50*F. Cooler contained TCS items including diced chicken, smoked salmon, queso sauce, chicken wings, slice ham, shell eggs, cherry tomatoes, and cream. measured with inspector probe thermometer the products measured between 50 - 51*F. Chef voluntarily discarded products at time of inspection. Discussed with Chef that refrigeration should be maintained at 41* or below when cold holding. Corrective Action: Corrected at time of inspection.
