Observed high temperature sanitizing dish machine sanitizing cups at time of inspection. Observed maximum surface temperature after a full cycle, of 136°F with establishment's min/max thermometer. Observed dish machine log from this morning list a temperature of 126°F. A utensil temperature of at least 160°F must be reached during the final rinse cycle for adequate sanitation. All dishes will be sanitized in the 3-compartment sink until the dish machine is fully operational with a final rinse temperature that achieves a utensil surface temperature of 160°F, or the equipment can be switched to chemical sanitizing (50-100 PPM chlorine) with low temperature water. Provided electronic version of MCESD Hi-Temp Sanitizing Dish Machine logs. Ensure staff is trained regarding proper temperatures and sanitizer concentrations. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Discussed the option to switch the dish machine over to chemical sanitizing (measured at 0 PPM at time of inspection).
