sushi, packages assortment of mahi, California rolls, sushi rolls containing rice, cooked shrimp and seafood salad all noted at 47-53 deg f . spoke to facility manger on duty. noted 3-4 tiers of food in the front self service sushi case. the lowest and second tier at 40-43 deg f . recommended to manager not to overfill the food self service cooler. please store excess tcs food in the designated facility walk-in cooler till needed. please ensure rte/tcs food is kept at 41 deg f or cooler. manager removed food in temperature danger zone. Corrective Action: Corrected at time of inspection.

noted towels used for wiping knives and cutting boards placed back on the cutting boards. suggested to place towels in a designated sanitizer. per manager they are required to wipe the surfaces with sanitizer , quat ammonia spray bottles and discard the soiled towels after each use. manager provided quat ammonia at 200 ppm, and discarded used towels. Corrective Action: Corrected at time of inspection.
