Observed fried chicken, fried pork, cooked eggrolls and cooked BBQ pork in walk-in refrigerator, prep cooler and two-door refrigerator without date marking. Manager stated the above food were prepared or taken out from freezer 24 hours prior to inspection. Reviewed the date marking parameters with manager. Manager put proper date marking on above food items at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed 4 pans of shrimp cooling on sheet pans in the dry storage area at room temperature. Shrimp was between 85*F and 100*F. Per manager they were cooked and placed there to cool 2.5 hours prior. Because the shrimp did not reach 70*F or below within the first 2 hours, it was embargoed. Observed 2 pans of fried chicken cooling in a similar manner to the shrimp in a pan and a sheet tray at ambient temperature. These were fried 1.5 hours prior. Chicken was promptly moved to the walk in cooler to cool. Discussed cooling methods.
