Corrective Action: Corrected at time of inspection. Employee touched their glasses and clothing then started to put on a glove to handle food without washing hands. Had employee wash hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Corrective Action: Correct prior to next routine inspection. Accumulation of food debris inside the cold drawer units and in the two door freezer. Please maintain clean. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Ranch and other dressings in plastic portion cups stacked high in pans in the top of the cold table at 51*F internally. Manager stated the dressings had been held as such less than one hour and had them relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Please ensure all TCS food is held below the proper fill level.
