#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Hard boiled eggs, roast beef, sliced tomatoes, and other TCS food items in prep cooler found with internal temperature of 50-54*F; temperatures verified with both PIC's and inspector's calibrated probe thermometers. PIC stated the food items in the cooler were placed inside around 11:00 AM today and moved them to the walk-in for cooling and continued cold holding. The food items ended up not cooling to 41*F prior to the end of the inspection and PIC had all the food items voluntarily discarded. The cooler's ambient temperature was 50*F and will not be used for cold holding until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below Corrective Action: Corrected at time of inspection.
