Inspector's notes
Observed several display cold holding units used to store the establishments TCS foods having an ambient temperature of 51-53*F. Establishment had their protocol in place prior to the inspection preventing the sale of all TCS foods in these unit. Technician was able to fix the unit by the end of the inspection and had the unit being able to provide an ambient temperature of 41*F. Reviewed how cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
