Inspector's notes
Observed black and brown accumulation of organic matter on the underside of the soft serve machine. Informed PIC that this area needs to be cleaned and continue to be cleaned at a rate which precludes the accumulation of organic matter and debris. Discussed monitoring the cervices of machines for buildup during cleaning to ensure the equipment stays clean to sight and touch. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.
