Observed ahi tuna holding 49F in a plastic container in an ice bath that was only touching the bottom of the container. Discussed using metal containers for ice baths, and surrounding the containers with ice to allow for the food products to remain at 41F or below. PIC stated that the tuna had been in an ice bath for three hours. The tuna was discarded. Also observed shredded cheese holding 49F in a separate ice bath. PIC stated it was holding there for an hour. The cheese was moved to refrigeration to cool down to 41F and was replaced with a metal container of shredded cheese holding 39F. TCS food items must be held at 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
