Observed build-up of organic matter on soda nozzles at soda fountain. Per manager, nozzles are removed and cleaned once a week. Discussed increasing cleaning frequency to prevent build-up. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed dishes soaking in quat based sanitizer in 3-compartment sink with a concentration measuring below 150ppm. Manager replaced empty container of sanitizer with a new bag and connected to dispenser. Sanitizer still measured below 150ppm. Manager manually added sanitizer to compartment until concentration measured between 200-400ppm. Discussed training staff to regularly check and log sanitizer to ensure quat based sanitizer concentration measures between 200-400ppm. Manager placed a work order to have dispenser serviced; staff will manually mix water and sanitizer until dispenser has been serviced. Correct By: Corrected At Time Of Inspection
