Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Ensure the cooked rice is thoroughly cooled (at or below 41F) before tightly packaging and stacking in a container. Reviewed cooling process with staff.
