Observed an uncovered cup of coffee on a storage rack and a bottle of electrolyte in the reach-in cooler. Person in charge (PIC) moved the employee drinks to a designated area at time of inspection. To ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area. Corrective Action: Corrected at time of inspection.

Observed ROP salmon labeled keep frozen in the pull-out drawer cooler thawing without being exposed to air. Person in charge (PIC) opened the packages at time of inspection. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Also observed ROP roasted/cooked chilis being thawed in the prep sink without running water. Also observed tamales being thawed under the hot holding table without any refrigeration. PIC moved the tamales and the chiles to the walk-in at time of inspection. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.

Observed no cold water at the prep sink. Only hot water available. Person in charge (PIC) stated there was a leak and the cold water was turned off. Also observed the cold water not working at the hand sink near the service area. Person in charge (PIC) will have a plumber check and fix all sinks and leaks so that cold and hot water are available. Cold water worked at all other sinks. Must repair all plumbing to a state of good repair prior to next routine inspection. All plumbing must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection.
