Observed employee restroom that can be used by females with a trash receptacle with no lid. Observed women's restroom for customers with trash receptacles with no lid. Discussed with the person in charge that any restroom that can be used by a female should have a trash receptacle with a lid for proper disposal of sanitary napkins. Observed the left reach-in cooler on the cook line containing pancetta, raw steak, sour cream and mini chicken chimichangas at 51-60'F at the time of the inspection. Cooler was operating with an ambient temperature of 58'F at the time of the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Some items were moved to another properly functioning cooler to cool and hold properly at the time of the inspection. Pancetta and the sour cream had been in unit for more than 4 hours and was discarded at the time of the inspection.

Observed dishwashing machine in use with 0 ppm of chlorine after 3 fresh cycles. Chlorine must be kept in the concentration as stated on the bottle (50-200) ppm. Prior to end of inspection, manager was able to get the dishwashing machine working. Dishes were rewashed at the proper concentration. Corrective Action: Corrected at time of inspection.
