The only open food is brewed coffee, coffee creamer dispenser, cappuccino machine and frazil equipment that are taken a part and washed rinsed and sanitized in three-compartment sinks. Discussed the modification of the approved permit with the manager that may cause the classification or closure of the permit.

Observed mashed potatoes at 81F and gravy at 100F stored in the hot holding device. The PIC discussed that the food was taken from the fridge an hour prior to inspection and placed directly into the unit to reheat. TCS food reheated to 165°F for 15 seconds and shall be done rapidly (does not exceed 2 hours). The PIC placed the products in the microwave to reheat over 165F before placing back in the unit. PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law Observed a mop sink drain draining slowly over by the employee restrooms. All plumbing must be maintained in order to prevent any potential health hazards due to sewage and backflow. The PIC plunged the drain and was able to unclog the drain to allow for the mop sink to flow properly and will continue to monitor the sink. Correct By: Corrected At Time Of Inspection
