Observed facility is using time control for the cut tomatoes of the prep line. Tomatoes are at 50-51F. Facility has a date dot, but no timestampe for when it was removed from the fridges. Manager added a stamp for the item that was restocked 1 hour ago. Ensure that all cut tomatoes being kept in the danger zone have a timestamp, and thrown out after 4 hours or less. Corrective Action: Corrected at time of inspection.

Observed employee drop paepr towels on the ground, picked them up, and then proceeded to put gloves on for further food tasks. Manager spoke with the employee, and had them immediately wash hands. Ensure that hand washing is occurring going from dirty to clean tasks in the kitchen. Corrective Action: Corrected at time of inspection.
