Observed the front section of large walk-in with internal ambient temperature of 53.7F as measured by inspector min/max thermometer. TCS food items in the front section of the walk-in had internal temperature between 43F-50F. TCS foods in the rear section of the walk-in had internal temperatures of 41F or below. The person in charge placed a work order for service at the time of inspection. The establishment has several other walk-ins and freezers for cooling and maintaining cold holding of TCS foods. Discussed restricted storage of TCS foods in the section of the walk-in until service has been completed and TCS cold holding temperature of 41F or below is maintained. Observed TCS food items in the walk-in with internal temperatures between 43F and 50F. TCS foods included various salsas, dairy based drinks, precooked seafood, precooked chicken, dairy rice pudding, dairy based atole drink mix, precooked rice, precooked beans, raw meats, and cooked deli meats. The person in charge stated the food item had been stored in the walk-in for more than 4 hours and the food items were embargoed at the time of inspection.
