Shredded carnitas in salsa verde in long metal holding pan on grill, with one end propped up splash guard, causing pan to be without contact to direct heat. Internal temperature ranged 109-124*F on left end propped on guard. Person in charge mentioned foods were placed in the unit within 1 hour prior to inspection. All hot temperature controlled foods should be held at 135*F or above. Person in charge had employee change food into a shorter pan to fit on grill and reheated to reach internal temperature of 185*F to hold at 135*F.
