Observed TCS foods in the walk in to have temperatures of 59F, measured with a calibrated probe thermometer, for an indeterminate length of time. Foods included bacon, butter, milk and cream. Observed the walk in cooler to have a temperature of 60.9F, measured with a calibrated min/max thermometer. Cold holding units must be capable of keeping TCS foods at 41F or below. The PIC called for service at the time of this inspection. The establishment has other functioning cold holding units available, sufficient to operate until the walk in is repaired. Will reinspect within 10 days. Please submit documentation of repair and temperature shown on a thermometer kept in the walk in by email. Correct By: Correct Prior To Reinspection
