Inspector's notes
Observed f'real blender with variance for alternate cleaning and sanitization schedule in facility. PIC was unable to produce the required cleaning records upon request, as stated in variance issued by Maricopa County Environmental Services department. All procedures in approved variance plan must be conformed to at all times. Documentation for critical control points in approved variance must be completed, available for review, and retained as required by approved variance plan. PIC called maintenance for procedures on how to produce records at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a build up of organic matter in drain in the stock room behind the soda dispensers. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. PIC stated that this drain will be cleaned. Corrective Action: Correct prior to next routine inspection.
