Observed build up of grease and debris on the card board being used as a placement for the pizza pans. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Please removed cardboard and if needs be replace with a material that is smooth, cleanable, and non absorbent. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed cut tomatoes, cut lettuce, and sliced deli ham with an internal temperature range of 47F-50F stored in the salad/deli sandwich prep table. Per PIC, the food items were prepared a few days ago and held in the prep table for over 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

At time of inspection, observed salad/sandwich prep table, with a minimum ambient air temperature 49.2F, maintaining TCS foods above 41F at time of inspection. The facility has other cold holding units for storage and for cooling TCS food for the salad/sandwich food items. PIC called a technician to have the prep table repaired at time of inspection. Equipment used for cold holding must be able to have the capacity to properly maintain all TCS food at 41F or below. Instructed PIC to not store any TCS foods in unit until the unit is repaired and holding at 41F or below. Corrective Action: Corrected at time of inspection.
