Of note: discussed separation and storage of raw animal proteins, backflow prevention record-keeping, and frequency of cleaning food contact surfaces. Pasteurized liquid eggs are considered a ready-to-eat (RTE) food and should not be stored underneath raw chicken. Provided backflow testing information via e-mail regarding the reduced pressure zone (RPZ) backflow assembly beneath the dining room soda tower. Food contact surfaces for time-and-temperature control for safety (TCS) foods, such as the spindles that stir ice cream for milkshakes, should be washed, rinsed, and sanitized at least every 4 hours.
