Hot holding unit in the cook line has an internal temperature of 120 degrees F. Cooked TCS food stored in this unit. Chef stated the door keeps opening and closing a lot. Advised to set the unit for higher temperature. Unit's ambient temperature reached to 170 degrees F. Advised manager to set the temperature high so during rush time TCS food does not loose temperature. Corrective Action: Corrected at time of inspection.
