Inspector's notes
Nacho cheese in dispenser measured an internal temperature of 91'F. Per person in charge machine had not been turned at any time recently. Thermostat on side of machine showed that machine was holding <100'F. Person in charge placed a work order for machine and will cease use temporarily. TCS foods shall be held at 135'F or higher when hot holding. Corrective Action: Corrected at time of inspection.
